The first one i would have to say is probably midgrade. Its highly populated with heavy junk and don't look like it will have a lot of chips or anything else on it. It also looks like its coated with glue. The second one i would remove the small heat sink to the left, the wire and probably the capacitors and 4 white transformers to the far right. You might have High Peripheral but don't take my word on that, i would email chris@boardsort.com and seek a professional opinion. I'm not sure if high peripheral boards can be colored.

First is almost the definition of mid-grade. If you refine gold or have a source to sell them you can cut the gold fingers off. Mixed info on here about whether those fingers can count in the "trimmed gold fingers" category. Consensus seems to be no. If I had a couple pounds I would ask Chris directly.
Second board, assuming there is nothing on the back, just needs a little cleaning and is a great peripheral high grade board. All heatsinks and wire/connectors need to go. Twist the heat sink to prevent tearing off the chip. You can probably leave the white relays (they are not transformers they have tiny silver or silver/gold contacts and don't usually add or detract unless there are a lot of them in comparison to higher value stuff). If it were me I would also leave the gold fingers just to seal the deal. the capacitors in this case also are small and therefore light enough to not detract from value. I sometimes tear them off to help with packing density. I have read several places that capacitors smaller than a C-Cell battery usually don't mess with value. If it were a high telco board I might think differently.
Pretty much any board can be colored.
As far as colored boards, the only color that can't make a decent grade is carboard brown. They are stuck at low grade (from everything that I have read). Color used to be a big deal with motherboards, but the new classes entirely based on socket type got rid of that.
