Can you take the slot off of the motherboard and still sell it as a large mainboard?

If you are referring to removing the slot that the CPU itself goes into, that will downgrade the motherboard to peripheral grade. It's best just to take the CPU out, remove any excess plastic around the CPU slot, then sell the rest as-is.

I should have been clearer- I was referring to the plastic around the actual slot that is connected to the motherboard with those brass screws.

Thanks for the help!

The black plastic around the slot is encoraged to be removed and will not degrade the board at all.
